Challenge Day 4


So I guess yesterday would be hump day right? We can do it ladies! Last night we had Fettuccine Alfredo. Everyone ate it (except one picky son) but they agreed that they like it better when I use my own invented recipe. This time I used an alfredo sauce recipe from a book I got from the library; 500 sauces.

Here is the recipe:

Alfredo Sauce

Makes 1 cup

2 tbsp unsalted butter ( I used salted)
1 tbsp all -purpose flour
1 cup whole milk
1/3 cup heavy or whipping (35%) cream
1/4 cup freshly grated parmesan cheese (dried parmesan usually is not halal)
1/2 tsp sea salt (I used regular)
1/2 tsp freshly ground pepper (mine wasn't fresh)

In a medium saucepan, melt butter over medium heat. Sprinkle in flour and cook stirring, until pale brown, about 3 minutes. Gradually whisk in milk in a thin steady stream and cook, whisking, until thickened, about 2 minutes. Whisk in cream, parmesan, salt and pepper.

What I usually make for the sauce is butter, milk and mozzarella. I think its yummier too.
Added to this I put some toppings.

Melt butter in a pot, stir in garlic, green onions, then add scallops,shrimps until cooked and then add brocolli florets. (I used frozen ones). Toss into cooked fettuccine with alfredo sauce.

Sorry for the lousy bowl instead of a serving dish but you get the picture right?

My daughter also made a cake that you can find here. We thought it was ok. If you like things that are not too sweet this one is for you.

  1. I make my Alfredo this way, but it needs WAY more Parmesan cheese!! 1/4 of a cup??? Insane! Nope, I use at least 1 cup. And sometimes, I'll add 1/4 cup or so of cheddar...yum! If you don't have cream, you can always use cream cheese too.

  2. Oh that's why. Maybe they wanted to make it calorie wise. Cream cheese..yeah I saw a recipe for that in the Philadelphia Cream Cheese booklet.
    Thanks. I think maybe I'll try a combo or parmesan and mozzarella next time.
